What is Piperonal (Heliotropine)?
Piperonal (Heliotropine), also known as heliotropin, is an organic compound which is commonly found in fragrances and flavors. The molecule is structurally related to other aromatic aldehydes such as benzaldehyde and vanillin.

Piperonal (Heliotropine) is an arenecarbaldehyde that is 1,3-benzodioxole substituted by a formyl substituent at position 5. It has been isolated from Piper nigrum. It has a role as a plant metabolite, a fragrance and an insect repellent. It is a member of benzodioxoles and an arenecarbaldehyde.

3, 4-Methylenedioxybenzaldehyde is found in highbush blueberry. 3, 4-Methylenedioxybenzaldehyde is a flavouring agent used in cherry and vanilla flavour.

Heliotropin 99% as Piperonal. Odor Description: Cherry-like. Widely used in perfumery. Used in powdery accords, but also in florals, like muguet, carnation.

Strain, Brewer’s yeast. Description, it is an aromatic aldehyde with a floral odor commonly described as being similar to that of vanillin.

Piperonal can be prepared by oxidizing isosafrole or by using a multistep sequence from catechol or 1,2-methylenedioxybenzene. Synthesis from the latter chemical is accomplished through a condensation reaction with glyoxylic acid followed by cleaving the resulting α-hydroxy acid with an oxidizing agent.
